Winner, Winner, Chicken Dinner!!!
The weather today in NYC was glorious, which pleased Lucky to no end. It was sunny and unseasonably warm, so Central Park was teeming with lots people more than willing to give him the attention he feels he so richly deserves. After all, he works so hard all week long as my sous chef - a dog's life can be so hard!
Needless to say, after being out most of the day I wanted a dinner that was quick and easy. I was sure that a quick stop in the grocery store on the way back from the park would provide all the inspiration I needed. I always start in the produce department, seeking out whatever looks freshest and plan the rest of the meal from there.
A rainbow of peppers in bright orange, sunny yellow, Christmas red and rich green caught my attention as well the small, tender yellow and green squash. At home I had some grape tomatoes and mushrooms which meant I had everything I needed -- yup, veggie kabobs would be perfect. To keep the dinner light, I picked up some organic chicken breasts. They cook in less than 8 minutes in a cast iron grill pan and then I wouldn't have to worry about defrosting something in a hurry.

Dinner was great and took no time at all which means I didn't have to miss any of the World Series. The Phillies just won tonight's game. Since it's late, I'll post the recipe for the vinaigrette I used on both the kabobs and the chicken tomorrow. I'll also post instructions on preparing the kabobs for oven roasting.
